Use this pattern when…

  • Your Friday/Saturday dinner covers 40-50% of weekly revenue and Monday is nearly dead.
  • You have enough part-time staff to flex headcount by day instead of running flat coverage.
  • You want a baseline to argue with — most managers keep 80% of this and change the mid-week lunch.

What to watch out for

  • Closing Saturday at 23:30 and opening Sunday at 10:00 is a 10.5-hour turnaround — legal in most places, but the same person doing both weekends in a row burns out. Rotate the close.
  • The second Saturday cook is the first thing managers cut and the first thing they regret. Cut a server before cutting the kitchen.
  • Weekend-heavy scheduling concentrates tips. If your house splits pooled tips, the same rotation month after month becomes a fairness complaint.
